Rosa canina L. fruit and jam made of it – natural food colors E160a and E160d content and antioxidant capacity

Rosehip is one of the richest sources vitamin C, and jam made from it tastes delicious. In this work, content food colors E160a (lycopene) E160d (?-carotene) was determined, as well antioxidant capacity these products. By applying UV-Vis spectrophotometric method using Lambert-Beer law, a system two linear equations with unknowns set up, which used to determine concentrations for E160d. The lycopene ?-carotene in dried rosehip fruit 2.34 0.85, 7.25 2.01 mg 100 g fruit/jam, respectively. samples determined by DPPH test. 6.84 4.17 ?mol Trolox/100 fresh sample. Thermal processing affects lycopene, ?-carotene, capacity. obtained results reveal beneficial effects everyday consumption jam.
